George V Dining Room - Ashford castle has been entertaining guests long before the Castle became a hotel, playing host to many private parties from the time of the de burgo Family to the Guinness Family to today’s guests, thus establishing the George V Dining Room as one of the premiere Castle Restaurants in Ireland.
Located in the Beating Heart of the Castle is the George V Restaurant built by the Guinness family to host evening dinner parties for the visit of the Prince of Wales in 1906. Here one can sit under the soothing light provided by the 11 magnificent Waterford Crystal chandeliers and dine like Lord or Lady while listening to the harmonious notes floating through the air provided by our resident pianist.
Chef Stefan Matez has created a delightful menu using only locally sourced produce to ensure the finest quality and freshest ingredients reaches your table. As you unwind in the George V you can watch a tradition long standing here at Ashford as one of our many skilled waiters carves the roast & severs the day at your table for you.

Cullen's at the Cottage - Dine without formality on the Ashford Estate! "Cullen's" is the Cottage Restaurant in the setting of a traditional thatched cottage, a short stroll over the bridge from the castle! Offering an all day menu with a little something for everyone, Cullen’s opens seasonally from May to September and from October to April it relocates to Cullen’s at the Dungeon in the castle. Reservations are required.
A short stroll across the River Cong, Cullen's at the Cottage, named after the late Peter Cullen, the Maitre D' of the Castle Restaurant for over twenty five years. It is the final piece of the jigsaw as regards the Ashford dining experience, offering a bistro-style menu with a relaxed atmosphere.
The Drawing Room - The Drawing room or sun Lounge as it’s also known provides some of the most spectacular and breath taking views of Lough Corrib without having to leave the comforts of a 5 star restaurant behind.
While in the drawing room sink in to the soft furnishings while gazing out on to all the beauties that Lough Corrib offers enjoy a nice glass of wine as the sun beams turn the blue water gold or a nice steamy frothy cappuccino as the wind and rain blows across the crests of the waves making your surroundings that much more comfortable.
Lady Ardilaun, had a passion for gardening combined with a sweet tooth and the drawing room became one of her most cherished rooms where she would sit for long periods of time enjoying her afternoon tea while casting an eye over her prised and beloved garden.
The drawing room offers Lady Ardilaun’s afternoon tea with fresh homemade pastries, scones selection of finger Sandwiches and a wide variety of tea’s daily. If afternoon tea doesn’t tickle your taste buds then why not take a glance at the Drawing room Menu offering a selection of snacks to keep you going until dinner time.

Cocktail Bar - Built specifically in the late 1800's for the visit of the then Prince of Wales, who subsequently became George V of England, the bar with its comfortable seating and fine wood paneling, offers a full selection of cocktails, liqueurs and brandies. The Prince of Wales Room is located beside the main drawing room and is Ashford Castle's formal cocktail lounge and is a great way to enjoy your Luxury Castle Breaks.
